Throughout last week i have been thinking on what to prepare for my children to eat on Easter Sunday. I want to be creative and spice up things in the kitchen so that my family will have the best Easter Sunday.
What came to my mind was chinese rice and chicken curry sauce. Just thinking about them left me salivating . I was very happy that i have found an Easter dish for my family and i announced it to them over dinner few days ago that we would be having Chinese rice and chicken curry sauce.
"Disgusting!" my five years old shouted.
"I am sure you will eat them alone" my seven years old added.
I felt disappointed and betrayed but also relieved that i have not bought any groceries yet for the dishes. That was how i cancelled what i have been planning to cook for weeks and started making plans for something else.
"What of pepper soup and fried rice?"
Mummy just prepare jollof rice for us
And please make it very spicy.
I wanted to argue that i cook jollif rice atleast twice every month and there is absolutely no need to make it our Easter special dish then i remembered that i always chose jollof rice over a million other dishes in any buffet.
Guess Jollof Rice is the King of Dishes.
TO PREPARE A SPICY JOLLOF RICE
We will be needing:
- Chicken
- Rice
- Carrots
- Spring Onions
- Olive oil
- Fresh tomatoes
- Tomatoes paste
- Salt
- Spicies
- Onions
First is to cook the chicken
I wash the chicken with hot water
Spice it up with salt,seasoning cubes, garlic,nutmeg, ginger,curry and thyme.
Allow it to marinate inthe freezer for ten minutes then cook on low heat.
Once the meat is soft, i put it inside the oven to achieve a crispy bite.
COOK AND FRY THE TOMATOES
I first blended the fresh tomatoes and cooked on a high heat till all water are gone. Then i add the tomatoes paste and olive oil to allow them to fry for ten minutes. This will remove the sour taste from the fresh tomatoes.
Add the chicken stock in the tomatoes and allow it to cook for five minutes.
Add other spices like curry, seasoning cubes, salt etc. I don't like too much spicies in my jollof rice so i use as little as possible.
The next stage is the rice. Get the quantity of rice that will be suitable for your tomatoes sauce and parboil it.
I love parboiling rice as it reduces the quantity of starch in the rice.
Add small quantity of water inside the pot that have the tomato sauce. Pour the parboiled rice into it and stir with cooking spoon for appropriate mixture of the rice and sauce.
Allow to cook in low heat for twenty minutes or until the water have all dried.
Add your vegetables: carrot, green beans, green pepper and spring Onions.
Turn all together and allow to heat for two minutes.
Off the cooker because your Jollof rice is ready.

THE PLANTAIN
plantain over the years have proven to be the best side buddy for jollof rice. The both goes well together and can literally find himself or herself in heaven by just eating the combo together.
I first dice the plantains before frying them. This should not take more than ten minutes and they vn are ready.
