Happy sunday guys, on today’s episode on creative sunday, i decided to try out a recipe that i have never tried out before, Egg plant sauce and boiled yam. I have heard people talk about this particular recipe and how nice it tastes, so i decided to try it out today and share it with you guys.
Ingredients needed for this recipe are;
-Eggplants (garden eggs)
-fresh tomatoes
-fresh peppers
-yam or plantain
-smoked fish (optional)
-seasoning
-firstly wash the eggplants to remove dirts and bacterias, cut them into sizes and boil till they become soft for some minutes, after that remove them from the boiling water and put them in a mortal and march them, you can also use food processor to grind them roughly or smoothly, any consistency of choice.
Next step is to blend tomatoes and peppers and onions, but i used only peppers and onion for mine, because I didn’t really plan on making this dish so i just used what was available.
Next step is to put a clean pot on fire, add a small quantity of palm oil, allow to hot then add sliced onions, after that add the pepper mix, the marched egg plants, you can also add smoked fish , crayfish, anything protein of choice, I used left over suya because that was the only thing available at the moment, then add seasoning to taste, allow to cook for for like 7 minutes and your egg plant sauce is ready. Serve with boiled yam or plantain and enjoy hot.
The tastes was phenomenal and my time was worth it.
