Happy and wonderful day, Sunday is here again, how fast the week goes by, this time I want to join the Sunday creative content, and share a new recipe, its main ingredient, cassava, this tuber is very versatile in the kitchen, it lends itself to many preparations, today I bring you some YUCA empanadas filled with llanero cheese.
Ingredients, we will need:
-500 grams of cassava
-1 egg
-3 spoonfuls of cornflour
-Salt to taste
-Llanero cheese
-Garlic powder
-1 tablespoon of butter
-Black pepper to taste
-Oil
-Enough water
-Avocado for garnish
Preparation: step by step:
- We start by removing the shell from the yucca, clean it very well in plenty of water, transfer it to a pot with enough water, put it on the cooker over high heat so that it softens completely.
- After the time has elapsed, check the cassava. If it is soft, drain and transfer it to a bowl and remove the strip from the centre, then mash it all to a smooth puree.
- Add the egg and butter to the cassava puree.
- Then add the powders: cornflour, salt, garlic, pepper, knead vigorously with the help of your hands to remove any lumps and obtain a smooth and manageable dough.
- While we make the balls to start with the empanadas, put the frying pan on the cooker, add the oil so that it heats up.
- We proceed to grate the llanero cheese and assemble the empanadas.
- Place a piece of plastic wrap on the counter, flatten the balls, add the grated cheese, close each empanada and transfer it to the frying pan with the previously heated oil.
- Finally, let it cook, browning it completely on both sides.
- Serve and enjoy, accompanied with slices of avocado.
- These delicious yucca empanadas stuffed with llanero cheese can be eaten as an appetizer or snack at any time of the day. This was our breakfast today!
