Hello friends, I hope you are having a wonderful Sunday! Today I join the Domingo Creativo initiative by sharing a nutritious, delicious and healthy recipe, this is a delicious zucchini and vegetable tortilla filled with cheese and parsley and served with hummus.
Without further ado, here are the ingredients and the step-by-step:
1 zucchini
2 eggs
white cheese to taste
15 grams of parsley
1 cup wheat flour
1/2 cup of liquid milk
1/2 carrot
1/2 onion
Spreading oil
Salt to taste
a pinch of pepper
𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧: 𝕊𝕖𝕡𝕥 𝕓𝕪 𝕤𝕥𝕖𝕡:
- We start by washing the vegetables: zucchini, carrot and onion, we take them to the board, cut the sides of the zucchini, remove the skin of the onion and carrot.
- I grate the vegetables using the coarse part of the grater: first the carrot, then the onion and finally the zucchini with its skin.
- Wash the parsley in plenty of water, place on a board and chop finely.
- Grate the cheese and add to the parsley, stir and set aside.
- In a container we transfer the vegetables: zucchini, carrot and onion. Stir.
- Next, add the eggs and the liquid milk.
- Now add the wheat flour in two parts, stir well until all the ingredients are integrated.
- Finally, season with salt and pepper. Stir.
- Turn the stove on medium heat, grease the pan with a little oil and pour a ladleful of the zucchini tortilla mixture. Spread the mixture and let it cook on one side. When you see that it is ready, flip it over. Then add the cheese and parsley mixture, flip the tortilla over again and let the cheese melt. Remove the tortilla and repeat the same procedure until you have finished with all the mixture.
