- Hi friends, today I want to share and show you how to prepare a very special parchita ice cream cake that fills me with joy and pride because today is my son's birthday, I did it to celebrate his birth full of laughter, hugs and above all, love. And to make this occasion a truly unforgettable moment, I decided to surprise him with this dessert that reflects all the love I feel for him. Being passionate about exotic flavors, I knew that the perfect choice would be a delicious parchita ice cream cake, and I decided to make him the protagonist of this sweet and refreshing gift.

For the ice cream base:
- 2 eggs
- 4 tablespoons butter
- 2 cups wheat flour
- 6 tablespoons sugar
- 6 tablespoons filtered water
For the filling:
- 4 passionfruit
- 1 can condensed milk
- 4 egg yolks
For the meringue:
- 4 egg whites
- 125 grams of sugar
- 1 lemon zest
Preparation: step by step: ππ¨
- Preheat the oven to 180Β° Celsius, then in a bowl mix the wheat flour with the butter and try to obtain a sandy texture, when we see all these two ingredients integrated add the sugar, eggs and water, stir, knead and set aside in the refrigerator for 45 minutes.
- Waiting for the previous dough to harden, prepare the mixture in the blender, add the passionfruit pulp, egg yolks, condensed milk and sugar, strain and set aside.
- After the time has elapsed, spread the dough on the tray, adapt to the mold and bake in the oven for 10 minutes.
- After 10 minutes, remove from the oven.
- Then add the mixture to the baked base.
- Bake again in the oven for 20 minutes at 180Β° Celsius until golden brown.
While the 20 minutes are passing, we are going to elaborate the meringue.
Add the egg whites in a bowl, then the sugar, stir with a mixer until the sugar dissolves, add the lemon zest, beat until the egg whites are stiff until you obtain a meringue.
Decorate as desired, sprinkle with parchita pulp.
Take to the refrigerator, remove after 4 hours and enjoy.
