Today's meal is simple and common in some parts of the world but as simple and as common as it may be, this particular food made it to my favorite foods list when I was younger. I easily get tired of a particular type of food after having it consecutively but this food is not one of those foods, I can have it multiple times a day as long as it is spicy and delicious.
Yam porridge was one of the food I ate a lot when we were kids, mom is a professional with it. It was all about yam porridge then but I ended up exploring the world of tubers crops. Not all tubers though, I have tried using cocoyam and potatoes, and both were perfect for porridge but one tastes better because of its natural sweetness.
Potatoes are delicious food and I doubt if there are people who don't like potatoes whether roasted, fried, or boiled.
For today's creative Sunday I will take you through how I made my potatoes and vegetable porridge.
Ingredients
- Potatoes
- Fluted Pumpkin leaves
- Fish
- Shredded meat
- Cowskin
- Sardine
- Shredded fish
- Onions
- Groundnut oil.
- Pepper.
- Seasoning.
How to prepare...
- Peel the potatoes first, cut them into smaller pieces, and wash them.
- Boil the potatoes with a little salt until it is soft.
- Turn the boiled potatoes into a basket and let the water drain.
- Heat your oil in a pot big enough to take all the potatoes.
- Turn your shredded meat and fish into the hot oil and let them fry for a few minutes.
- Add your onions and pepper into the hot oil, and allow them to fry as well.
I added seasoning and allowed everything to fry together. I use grated pepper and also a properly blended pepper because I love having my porridge very spicy.

- 3-4 minutes later, I added my boiled potatoes and turned it.
- Ensure that the potatoes get mixed with the sauce very well, and allow it to cook for a few minutes.
- You don't need much cooking since the potatoes are boiled already.
- The final part is adding your clean fluted pumpkin leaves and mixing them with the porridge very well.
- Allow it to cook for two minutes again, your potatoes and vegetable porridge is ready.
I mentioned earlier that the meal is simple to prepare and I believe you will agree with that after going through the process.
Porridge is cheap food and you don't need to break the bank to prepare it. A half a dollar worth of porridge will be enough for two depending on how much quantity of food they take and you don't need lots of fish or meat, they are not even compulsory if you don't have enough for it. With your oil, seasoning, and pepper, you can have porridge. All the other recipes I added were to make it tasty and more nutritious.
The nutritional value of the meal is fantastic, all the recipes combined will give you a rich balanced diet, and all you need to do before eating is get a bottle of juice to accompany the food while its journey to the belly.
