Festival season started in India and for Indians and now we have all the reasons to celebrate the festivals with traditional sweets and Kheer is one of Indian traditional dessert made with milk and sugar.
There are many variations of Kheer and every state of India has their own way to prepare it. Some variations of kheer are vermicelli kheer, rice kheer, paneer ki kheer samak ki kheer etc. Today I prepared Rice Kheer which is a loved dessert for my whole family and my go to recipe for any occasion.
So come and lets prepare Kheer with me. We require very minimal ingredients to prepare it, the main ingredient are Milk, Rice and Sugar but we can add more ingredients like nuts, dry fruits, saffron and cardamom to enhance the taste.
These are the ingredients which I used today.
☘☘☘☘☘☘☘ INGREDIENTS ☘☘☘☘☘☘☘
✔ Milk - 2 Ltrs
✔ Rice - 100 Gm
✔ Sugar - 4 Tablespoon
✔ Saffron - 18-20 Strands
✔ Pistachio - 15-20 Pieces
✔ Cardamom powder - 1/4 Teaspoon

Pour the milk in a heavy bottom pan. Kheer testes best if prepared in full fat milk.
Wash rice and soak it for sometime.
Put the pan on stove top for boiling. Once milk start boiling, add soaked rice in the milk and let it boil on mediam flame until rice becomes soft.
Add saffron in the milk while its boiling. It will release its flavour and colour in boiling milk.
Chop the pistachio in the small pieces and add it in boiling milk and rice. Reserve some chopped pistachios for garnishing.
Gradually rice will cook and become soft and milk will become thick.
Now add sugar in it and let it boil for some more time.
Once the sugar will dissolve in milk and milk will become thick switch off the flame. Let it cool on room temperature before serving.
Our kheer is ready now. Add remaining chopped pistachios and cardamom powder on top and serve with love.
