Cook with love. Cook with creativity. Cook something healthy.
One of the challenging work of a mom is to think of what food to be cooked and prepared for the family especially for the kids. We mother would like our children to eat more vegetables and fruits because we knew it has a great benefits for our body as well as into our health. But most mother have a hard time letting their children to eat vegetables because kids nowadays loves to eat more on fast foods and more on meats. So, we really need to give much effort and be creative in making or cooking food that is palatable and enticing for children. We need to prepare food that as they look at it, they will be excited to eat.
This morning, as I went to our kitchen. I noticed some left over rice. I am thinking of something to do about it so it couldn't be wasted and we could still eat it. I also realized that today is Sunday and there is a campaign for #creative-sunday. I then decided to make something creative today and to participate in hive learners creative-sunday.
Today, I will make fried rice for our breakfast. I will be using a left over rice and I will add some other ingredients with it to make it more delicious, more healthy, more palatable and more enticing for children.
I first prepare the needed ingredients for cooking and here they are.
- Oil
- Onions
- Garlic
- Carrots
- Rice (I used left over rice)
- Egg
- Spring onion
- Salt
I get the left over rice, and make it like that in the picture above so it can be mixed easily with other ingredients later.
I found some carrots in the vegetable basket so I get four small carrot and I slice in into small cubes. The same with onions and garlic, I make a small cubes so it will be cooked easily and kids or person who doesn't like to eat spices won't even noticed it and they can eat it along with the other ingredients.
I then remember that I have spring onions in my small garden. So, I pick some of its leaves and slice it into small pieces too. This is an advantage of having a garden because you can pick them when you need it and you can cook them fresh.
In cooking, I heat the small pan first and then add some cooking oil. Saute the onions followed by the garlic and then the carrots. Don't overcooked carrots so the moisture and its crispiness will remain. Then, add the leftover rice. Sprinkle some salt to taste. If you are using some seasonings you can add some too but in my case, I am not using any seasoning. I only use salt for it.
When they are mixed very well. I then add the one large egg. You can use two or more eggs to make it more delicious but this time I only use one egg.
You can also use ground beef or chicken instead of egg but you have to saute it after the spices.
I then add the spring onions and make the fried rice more colorful.
This is my fried rice and this will be our breakfast. No need to cook for viand because you already have rice and viand in one.
My son really loves it and he even hugged me and say thank you mama for cooking this today.
We have one more extra serve, so, my son gave it to his friend leaving next to us. He always love to give something even it is just small as long as he can share or give.
Off course, I love my cooking too and I felt satisfied and I felt I am creative this morning.
We also have some pineapple so I sliced it into small pieces. I then provide milk with chocolate flavor (gatas na choco) for my son and an amazing herbal coffee for me.
Here is our complete meal for this breakfast. We have go, grow and glow foods.
Rice as go food which has carbohydrates and gave us energy for the day.
Egg and milk as grow foods which are rich in protein essential for our bones and muscles.
Carrots and pineapple as glow food which has vitamins and minerals that is good for our eyes and skin. Pineapple is also rich in fiber that help us avoid constipation.
