Today is another beautiful Sunday. Yes! It is another edition of the creative Sunday where we get to showcase our talents.
This morning, I prepared a very delicious African soup. I had bought the ingredients yesterday, so I didn't have to go running to the market this morning to buy the ingredients. Although it was much easier because the ingredients were already available, at one point, I regretted starting the process because I was already getting late for church.
Melon soup, popularly known as Egusi soup, is a very delicious soup. Nigerians are known for their delicious delicacies and one of them is Egusi soup. One of the reasons why I love this soup is that I find it quite easy to prepare.
The egusi soup I prepared this morning is what I call low budget egusi soup😂. This is because I didn't use meat or stock fish (my favorite). I actually went to the market to buy stock fish yesterday, but the price was outrageous.
Here's a list of the ingredients I used.
Bitter leaf
Onions
Grinded pepper
Grinded melon
Dried fish
Maggi cubes
Palm oil
Crayfish
Cowskin (known as Ponmo in Nigeria).
There are different methods for cooking Egusi soup, but the one I’ll be going for is the frying method (well, because that is the type I only know how to prepare 😂)
First step
To get things in order and so you don't keep moving around looking for one thing or the other, the first thing you should do is to arrange your ingredients. Arrange them well and place them in a reachable distance.
Second step
Prepare the ingredients. Slice the onions and soak the cow skin in water mixed with salt. If you want to add stockfish, make sure you wash it well and soak it in hot water. Wash your bitter leaf (or any leaves of your choice), mix your ground melon with a small amount of water to form a paste and keep in a separate place.
Third step
The third step is to place a pot on heat and add palm oil. Allow to heat for about 5 minutes then add your onions.
Fourth Step
After you must’ve added the onions, the bread t step is to add the melon paste (the one you mixed with water) and cover. It is important that you don’t stir it, after adding the egusi paste, just cover it.
Fifth step
After about 12 minutes, add the fish, maggi cubes, salt, fish, cow skin, and other ingredients of your choice (like meat). Still gently for 5 minutes.
Add the bitter leaf (or any vegetable of your choice). After about 15 minutes, tada! Your egusi soup is ready.
Serve with any swallow of your choice!
