We all know that without Rice and Stew the Sunday is incomplete in an African home, Nigeria to be specific.
I would be sharing my Rice and Stew recipe and five step to guide you in preparation of stew and rice.
I hope you enjoy and learn from my proceedings, feel free to add your idea in the comment section.
First I would start with a list of the ingredients used in preparation of Stew, and here is the list;
Groundnut Oil
Fresh tomatoes
Two Sachet Tomatoes
Fresh Peppers ( Bell peppers and chilli peppers )
Onions
Salt
Spices ( curry, thyme , Chicken seasoning)
Chicken
Rice
Water
Crayfish
These are the ingredients, I would be using to make my Sunday special delicacy and I would explain the processes I'm using in five steps.

FIRST STEP :
The first thing to do wash your fresh tomatoes, peppers and onions.
After washing, you blend properly, then pour in a pot .
We all know tomatoes contain water and this water won't be needed in your stew, so you have to dry your blended tomatoes, pepper and onion until it's dry and has no water.
Then you keep that aside.
SECOND STEP :
The second step you would take is to season your chicken, after seasoning with some cubes , thyme and spices, you cook for about 30mins, until your meat is soft and well cooked.
After cooking, the next step is to fry your chicken with enough oil.
THIRD STEP :
After frying your chicken, you use same oil to fry your already blended tomatoes, pepper mix and your sachet tomatoes.
You fry for about 30 minutes.
After Frying, you can add your spices, cubes , salt and some seasoning and allow to boil for some minutes.
You can add crayfish, it's optional.
(I would suggest you fry on medium heat).
FOURTH STEP :
Your stew is almost ready, after boiling for some minutes, you can add your stock water, if you feel it's not sufficient enough, you can add little water, but make sure you are careful, to avoid preparing a watery stew. I prefer not to add water.
Your stew needs to be thick and oily, after boiling for sometime, at this point the oil flows to the top, then you are done.
Your stew is ready, the next step in to boil your rice.
FIFTH STEP :
The fifth step and final step is to boil your rice and these is how to boil your rice.
In a pot , you boil water, then wash and pour your rice into the pot.
After 30mins you filter with a seive, then wash twice, this process is called parboiling.
After parboiling, you go into the boiling proper, pour water in a pot and pour the already parboiled rice, and a pinch of salt , then cook until it's soft and ready to eat.
CONCLUSION:
At this point, your stew and rice is well ready and prepared , all you need to do is serve hot and enjoy your meal with family.
