The days are just running into each other! It's Sunday again!
Sunday is a wonderful day to "rest" I start my Sunday by going to Mass! A sublime and beautiful day indeed!

Oh, my! The smell is heavenly!
It is indeed ULTIMATE! It is a salty-sweet, smoky jerky with a chewy yet tender texture. It is totally fat-less (because it does not dry out and accelerates spoilage). The spiciness is not overpowering! What a delight to have! I wonder if he will share his recipe.
Did I tell you that he is also a Chef! Last Christmas, he sent me the best truffles I have ever tasted! Seriously!!!

At this time of the year, when the leaves start to change color, the temperature drops, and the days get shorter... I seldom come across insects in the backyard.
Insects can withstand cold weather best under conditions that are steady and do not fluctuate with many freezes and thaws, like California weather. They either hibernate, or diapause (a state of suspended development), or migrate.
Insect diapause is a lot like hibernation, but there are some differences. The main difference is that mammals remain active until winter is well established and temperatures are frigid, but insects that enter diapause become dormant in the autumn well before it gets too cold for them to function. Another difference is that mammals can sometimes rouse themselves for short periods of activity during the winter, but once an insect enters diapause, it will remain dormant until spring, even though the weather might be suitable for normal growth and development.1

I pouched chicken thighs. This time, I deboned it for a shorter cooking time. I made my usual dip of oil wiht ginger, green onions, and salt.
