This is such a simple recipe to make and these are absolutely delightful with coffee. If you have a pizzelle waffle maker you already know that they are everyone's favorite.
PIZZELLES
Ingredients:
3 eggs
1/2 teaspoon anise extract
1 teaspoon vanilla extract
1/2 c. butter, melted and cooled
3/4 c. sugar
2 teaspoons baking powder
1 3/4 c. all-purpose flour
- Beat the eggs and sugar together.
- Add butter, vanilla, and anise extracts. (or a flavor of your choosing)
- Sift flour and baking powder together and add to the egg mixture.
- Batter will be stiff enough to be dropped by a spoon.
- Spoon onto a hot pizzelle maker and cook for 1 minute or so until lightly browned. Place the cooked cookies on a sheet pan until all the cookies are made.
- Preheat the oven to 300° then turn the oven off. Put the tray in the warm oven for an hour or longer to help the cookies to dry out.
- When cool, sift confectionary/powdered sugar on top and store them in the refrigerator or a cool, dry place.
Making these is a very simple process and I know you will enjoy them as much as I do.
Another holiday cookie that is quite simple to make is Sesame cookies. Below, I will share the recipe with you as well.
SESAME COOKIES
1 c. sugar
1 c. melted butter or shortening cooled
3 eggs
1 teaspoon lemon extract
1/2 teaspoon salt
3 teaspoons baking powder
3 - 3 1/2 c. all-purpose flour
- Mix all the ingredients together in the order listed above.
- Roll small amounts of dough into finger-sized logs.
- Roll the logs into sesame seeds and place them onto an ungreased cookie sheet.
- Bake at 350° for 10 minutes or until lightly browned.
