There was no cooking involved at all, literally zero cooking, in respect of the lunch I made; I thought I'd get that out the way, make it clear before someone called me out on it because of my title.
I like to eat in a healthy fashion usually - most of the time - and tend to make most of my food at home as opposed to buying take-out food or going to restaurants; those latter two happen but nowhere near as much as it used to. I avoid heavily processed foods in preference for fresh food and look for a balance; I also limit carbohydrates, sugars, bad fats and sodium (salt). I feel far better for it, healthier, and enjoy cooking and preparing my own food, mostly. Sure, it gets tiresome now and then, but the health benefits that come from choosing or growing my own produce, knowing what goes into it, are there.
Anyway, I made this legit lunch the other day and thought I'd share it. It's quick and easy, cutting no cooking, and the taste is incredible. It's cheap too, and can be made into a bigger meal by adding a grilled chicken breast or schnitzel, a steak, fish or seafood or some such thing on the side.
So here goes, I'm going to explain how it's made. Listen up, it's sort of complicated.
Get a cucumber, small tomatoes, pitted olives (I use kalamata olives), and a red onion then cut those buggers up and throw into a bowl - I leave the olives whole. You'll need feta cheese, also cut up, but I don't put that in the bowl just yet - there's a reason, be patient
Now, and here comes the really hard part, get a bottle of French or Italian salad dressing and pour on - not too much you nutbag, be sparing! Now toss through to mix.
This is the exciting part, are you ready? Seriously, get ready, this bit is e-x-c-i-t-i-n-g. Ready? Ok, now then...it's time for the feta cheese to go in. The reason I leave it to last is because it breaks up when stirred in and I don't like that preferring it to remain in chunks.
See? I told you that part was exciting!
I don't add herbs or anything, although I've done so on occasions, fresh basil from my garden or some such thing...there's really no rules, you can do what you like if you decide to make it. I also do not add any salt as the feta cheese is rather salty already.
Typically I'd eat this as a lunch, sometimes dinner, on its own but I've been known to go full-bonkers and add some chunks of tuna fish, chicken or strips of steak to the salad, cold of course. Ocassionally, those times when my bonkers knows no bounds, I serve it as a side to a steak, chicken, fish, octopus or calamari. It doesn't really matter either way, it's bloody tasty, and easy...and there's no cooking involved which makes it a super-cool thing to make on the weekend when I'm too lazy to do anything more complicated...or during the working week when I'm also too lazy to do anything more complicated.
