The Three Little Kittens

Oh, goodness!
I am at the edge already. Staying home alone with these three kiddos of mine is driving me cray-cray.
They come up with their own cravings each time. No, actually it is mostly Little Miss who has special food requests. Yesterday, she said, "Mommy, I want to eat that yellow thingy we get at McDonald's or Jollibee."
She was referring to french fries. Of course, I wouldn't go to McDonald's to get french fries, instead, I made them french fries and cooked pasta for dinner.
This morning was a different story. She has another craving. Can you believe that?
"Mommy, can you please make cup cakes?"
Whaaaattt?
I already had another thing in mind.
How about donuts?
I saw this recipe on youtube the other day, and thought that of making it for the kids. Besides, the custard cream looks yummy!
The recipe said, "no yeast", so it should be fairly easy. I killed my yeast the last time I tried to make some flat bread, so I don't want to play around with them in the meantime.
I had no intention of documenting the process, because I did not think it would work, lol. It was only when I started frying and saw the dough expand, that I started taking pictures.
All right, before anything else, here's what you will need to make these ohh-lalah goodies.
Ingredients:
Vanilla Custard Cream Filling
- 3 egg yolks
- 1/3 cup sugar
- 1/3 cup all purpose cream
- 1 cup milk
- 1 tbsp cornstarch
- 25g butter
- 1 tsp vanilla extract
Dough
- 3 cups all purpose flour
- 2 tbsp baking powder
- 1/2 tsp salt
- 3 tbsp vegetable oil
- 1/4 cup white sugar
- 1 egg
- 175ml milk
You will also need:
- Vegetable oil for deep-frying
- confectioner's sugar for coating
How to Do It:
Vanilla Custard Cream Filling
- Mix together all the ingredients in a small pan.
- Cook over low heat while stirring constantly.
- The cream is ready when large bubbles pop already, and the mixture thickens in consistency.
The Donuts
- Slowly beat the egg and sugar together.
- Add all the dry ingredients into the egg and sugar mixture. Mix well.
- Add the milk and oil. Mix well.
- Knead thoroughly until smooth.
- Roll the dough into a big ball, put in a bowl and allow to rest for one hour.
- After one hour, flatten the dough with a rolling pin, until about half inch thin.
7 Preheat vegetable oil in a deep pan.
8 Using a cookie cutter, cut the dough into small circles.
9 Slowly put each cut dough into the hot oil. Fry until golden brown on each side.
10 Using a stick, poke a hole into the donuts. Make sure to slide the stick from side to side, to make pockets for the cream filling.
11 Slowly "inject" the cream filling into each donut.
Check this cream-filled donuts out! I also could not resist!
Now, for the best part.
Make sure your kids don't finish all the donuts in one seating!
The recipe yielded me 15 medium-sized donuts and if I did not watch the kids, the donuts would have vanished into thin air within a few minutes.
I had to remind them to keep some for daddy .

I have more custard cream left, and since the kids seemed to have liked them, I think I will make another batch tomorrow.
Hopefully, the kids have satisfied their cravings for now, and won't ask for anything out of the ordinary tomorrow.
