Chicken is an absolute staple in our house. is not a huge fan of pork or beef, so we tend to find our protein in bird form as much as possible. We actually just went out the other day and bought our second twenty pound batch of boneless/skinless chicken breasts since the whole pandemic really picked up steam.
Don't think we are going crazy though, twenty pounds of chicken doesn't really go as far as you think it would, especially when we are eating out less and eating at home more. Those two ten pound bags of chicken get separated in to breasts to grill like you see above, little cubes to use in casseroles and things like that and then the rest I grind up for burgers and things like taco meat.
Eating a lot of beef when I was younger, it was quite a transition moving to mostly chicken. I don't really mind it too much now and I still get some beef and pork every now and then to sate my cravings.
One of my favorite things we make with grilled chicken is Greek tacos. Kind of similar to a chicken gyro, but a little different.
We start off with a flour tortilla that has been lightly warmed on the cook top. On top of that we add some dill cream that my wife makes.
Then the chicken is added
Next we add the greens mixture of onions, lettuce, tomatoes, black olives, and cilantro.
Finally, we top it off with some Greek dressing and Parmesan cheese.
I typically eat at least three of these in a single sitting. Then whatever is left we eat as salad the next day. The "taco" has such a light and fresh taste. It is filling yet not overly so. It is something you don't have to feel bad about consuming.
Dinner the next day was this fantastic concoction. It is basically a chicken and zucchini waffle. Talk about a total savory bomb in your mouth. They are totally fantastic. We basically use the pressure cooker to cook the chicken fast and then we shred it and mix it with an egg and some shredded zucchini. I am pretty sure my wife add some other stuff too. Throw it on the waffle iron and in a couple of minutes you have this masterpiece. They are really fantastic!
I realized the other day that I haven't posted any images of our breakfast. Those have been pretty fantastic as well. This was an egg scramble we had the other morning with peppers, onions, turkey sausage and cheese.
This was chicken meatloaf with a mushroom and zucchini pasta sauce over it. I didn't get a good shot of the meatloaf, but I assure you that was homemade as well. Ground chicken, Italian bread crumbs, an egg, Parmesan, and some herbs and spices.
The weather has been fantastic the past couple of days so we have been grilling quite a bit.
This meal was potatoes and onions in foil along with marinated chicken breasts.
The other day when I was at the butcher shop I decided at a pork steak sounded really good. It is a cut of meat that I don't feel gets the love it deserves. Less lean than a pork chop, pork steak is much juicier and flavorful in my opinion.
So I grilled one up along with a chicken burger for the wife.
Finished off with Brussels sprouts and potato salad, it was a fantastic meal. My wife makes some of the best potato salad North of the Mason-Dixon.
Last night we had grilled chicken fajitas, another one of my favorites!
Finally, if you know me, you know I also like to share what I am drinking. I picked up this bottle the other day when I was out getting the twenty pounds of chicken we needed to process. At $50 this is a little more than I usually spend on a bottle of whiskey. I wanted to treat myself though. I am still getting used to the Sherry Cask finish this has. It leaves a distinct flavor with the whiskey. I am not sure I like it yet. I am sure by the end of the bottle I will be fine with it though!
