Psychologically people thinks that Sunday is a day to enjoy, to eat something good with family or go out somewhere together. In fact ladies are more excited on Sunday because she has a company from her husband full day, hence she tried to cook something tasty, something different than regular, they usually choose the dish to cook which takes more time and labor. So last Sunday my wife cooked Pakoda Kadhi, yellow fried rice along with Trichosanthes dioica (Parwal) and bitter guard.
The ingredients she has used are Chickpea, Curds, Onion, Carrot, Garlic and almost all vegetable spices. First you look the dish after that i will tell something more..
Chickpea is used to make round shape pakoda , Some people used Gram Powder in place of Chickpea. After making the round shape of pakoda she fried those pakoda in oil, she has kept the flame low to medium always so that the pakoda can not be tight, it is must to fry and stay in little soft and it must be some tiny holes in all pakoda so that the gravy (Kadhi) can enter inside it. After fry she has fried all spices with onion and garlic for 10 minutes then she mixed curds over there and left it to boil for 10 minutes in medium flame, when the gravy getting fully boiled and all spices got mixed with each other properly she pored all pakoda there and left it again for boiling till 10 minutes and Pakoda Kadhi done.
Now it is time to yellow fry rice...
As usual first boil the white rice then she first fry the carrot with onions and chillies with some spices and when it goes we fried she has pored the rice into it and mixed it properly.
The topped item is onion pakoda which gives always an extra taste. The two extra dishes Trichosanthes dioica (Parwal) and bitter guard is only for me because i like both.
