Would any of us ever have imagined a year ago that most of the world would be in lockdown this Easter Monday?

Not me for sure!
We're on Day 18 of Lockdown here in South Africa, and the only doors that are open are food stores, medical and health services, petrol stations as well as banking services. I really feel like time is standing still; as if our lives are in limbo.
Today has been a gloomy Monday, matching my mood as this seems to be a neverending story!
Whatever happens in the future, one sure thing is that Mondays will come and Mondays will go, and 's Fruits and Veggies Monday is still here on Hive, so take a peak...d at that and be inspired by the delicious plant-based foods from all our FAVM chefs! Hope to see some new faces here as well:)
We love having Hot Cross Buns with our morning coffee so I usually buy a couple of packs from my favourite store and freeze it, but this year not being the norm, I made my own!
I've been instructed by the son to sanitize all my groceries so how the heck are you supposed to sanitize Hot Cross Buns? Better to make my own!
THE RECIPE
- 350ml unsweetened Almond Milk
- 50 gram melted Vegan Butter
- 2 Tbsp Olive Oil
- 1 Chia Egg
- 3 1/2 cups Stone Ground Cake Wheat Flour
- 1/2 cup Wholemeal Flour
- 1 tsp Mixed Spice
- 1 tsp Cinnamon
- 1/2 cup Castor Sugar
- 1 tsp Salt
- 1 cup Raisins & Sultanas
- Rind of 1 Orange
- 10 gram dried Yeast
Place liquid ingredients into large mixing bowl and beat together.
Add dry ingredients and knead together till a smooth shiny ball is formed.
Cover and leave to prove in a warm place, till dough has doubled in size.
For the crosses - mix a little flour with Vanilla & water, not too stiff but not too runny either.
Knock down dough and form a long sausage shape, cut into slices.
Shape each piece into a ball & place on sprayed pan.
Leave to rise, then pipe crosses on top.
Place into 180°C oven for 25-30 min or till a nice light golden brown.
Melt 2 Tbsp Apricot Jam with equal amount of water and glaze buns as they come out of the oven.
Serve warm with Vegan Butter or enjoy them toasted afterwards.
