Today, I am sharing another recipe to help you survive during ncovid19 lockdown. Most of my meal are cheap,nutritious and easily cooked even if you only have a rice cooker/ instant pot.
This time, I am sharing rice noodle soup recipe. I would say, it's much better if you have chicken stock and even canned meat. Toss them into this soup and you can survive another day. This recipe is also vegan friendly, just don't add any meat or any fishes.
Here are the ingredients I use :
- A carrot
- 2 handful macaroni
- A handful anchovies
- leek (finely chopped)
For the soup
- 250 gr water
- 1/4 tsp oyster sauce
- 1/4 tsp paprika powder
- 1/4 tsp sugar
- 2 tsp mushroom buillon
- a pinch of oregano
- 1/4 tsp soy sauce
- 1/2 tsp tomato ketchup
HOW TO COOK THE RICE NOODLE
- Boil 500g water
- Add chopped carrot and rice noodle
- Wait until it cooks, drain them and let it cool.
HOW TO COOK THE SOUP
- Boil 250 g water
- Add all the soup ingredients including the macaroni and the anchovies
- Wait until it boils
- Let it cool
Finally, mix the rice noodle and the soup together into a bowl
This is a survival meal. So, no complicated ingredients, no difficult techniques and everyone can make it. Just make sure you know how to operate instant pot or a stove.
