The best way to feed veggies to kids is to mix it with something. Something that is chewy and is taste neutral. That way its possible to give that mixed object any flavor of your choice. The kids then enjoy the flavored chew-able object and the veggies just sneak in like ninjas. This object can be any root-based item like potatoes, tapioca, colocasia root etc. If the diet includes animal proteins then meat is also a good mixer.
One of my favorites, which my mom used to prepare to sneak veggies into me when I was a kid was Potatoes. In fact, even I don’t particularly enjoy eating just veggies. I prefer to mix it to make it more palatable. After all, eating tasty is just as important as eating healthy.
Okra is one of the healthiest greens a human can consume. Apart from the fact that’s its literally a powerhouse of fiber. It is also a nutritious food with many health benefits. It's rich in magnesium, folate, antioxidants, and vitamin C, K1, and A. It may benefit pregnant women, heart health, and blood sugar control. It may even have anticancer properties.
While some may develop a taste for it, but I could never manage to develop a taste for greens as such. Many of my friends ask me why I am so picky about taste since I am a vegetarian. I don’t really know how to react to that so I tell them the need for good food is a need for good food, irrespective of dietary choices.
Today I have created a Okra dish mixed in with nice sautéed potatoes. You can adjust the taste to make it more or less spicy. You can enjoy the dish as is or you can use it as sandwich fillings with (cheese) to make it yum. I would avoid the cheese if I was into a healthy diet. But that’s a choice you get to make. I just put out the science 😉
Ingredients (Serves 2)
1.5 cups chopped Okra.
1 cup chopped Potatoes
1 Big onion chopped
2 tbsp cooking oil / Ghee /As per diet.
½ tsp turmeric powder
1 tsp cumin seeds
Red chili Powder to taste
1 tbsp Coriander/Dhaniya powder.
Salt to taste
½ tsp sugar - Optional
The Recipe
Heat a pan over high flame. Once the pan heats, add a tablespoon of oil.
Add the potatoes, sautée them nicely and set aside.
Wipe the pan and add a tablespoon of oil and heat over medium flame.
Add the cumin seeds, stir for 10-15 secs.
Add the red chili powder and turmeric powder, stir 10 secs.
Add the onion. Fry till it become translucent or pink.
Add the potatoes. Fry them for a few secs.
Add the Okra and mix well for a few secs.
Sprinkle the coriander powder on top.
Sprinkle the salt on top. Add the sugar if you are into balancing of tastes kind of thing.
Mix well and fry them for a few mins until they are well done.
You can optionally add a spoon of oil/butter/ghee and mix it nicely. This will add to the crunchy taste. It will also add to the calories 😊
Fry for a couple of mins. Serve hot in a dish.
There your ninja lady’s fingers are ready. They will use stealth to enter the oesophagus of a human and carry out their mission which is to create massive nutrition in the body. Or atleast that’s what you can tell the young ones in the house!
This can be had as a snack or can be a healthy and tasty side dish for a proper meal. It's also a healthy dinner or late-night snack. The fiber ensures that you will have a pleasant experience in the morning. In fact, its probably a great way to replace our diet if we cannot atleast replace our habits.
