I came across this wonderful challenge #fruitandveggiesmonday by and I am very excited to share a delicious recipe that I ‘stole’ from my Indian friend, who is a very talented chef.
How can I describe this dish for non-Indian people? It is a vegetable stew that you eat with flat bread. 100% vegan.
The main veggie is calabash or bottle gourd or bottle squash. I see it everywhere in farmer’s markets in New Jersey. My Indian friend calls it doodhi.
So, here is the doodhi we used, the dish that came out and the pressure cooker we used to make it fast.
We used 3 pieces of squash, 3 large onions, ginger and garlic paste, 3 cups crushed tomatoes, cumin seeds, chili powder, turmeric, curry powder, salt.
Everything chopped and sautéed, then pressure cooked for 15 minutes.
Final result. Yummy and very healthy. We ate it with plain roti this time. I had 2 pieces and a whole bowl of squash.
