This time I will share a recipe for sweet porridge for breakfast. Mung Bean Porridge can be easily found in street food or small cafes in the morning. The combination of sweet and savory flavors for breakfast. Also, it is a healthy choice.
Rich in Fiber and Carbohydrates
Mung beans are known as grains that are rich in fiber and carbohydrates. Fiber is great for digestive health.
Meanwhile, the source of carbohydrates in mung beans is very suitable as a source of energy for the body. So Mung Bean Porridge can be the right choice for those of you who like sweet porridge for breakfast.
As an additional point of health benefits, the Mung Bean Porridge recipe uses slices of ginger. It's been around since the original recipe. Ginger is also very good for increasing immunity. So this dish is more healthy to be consumed as breakfast.
Besides being served warm, you can also enjoy Mung Bean Porridge as a dessert by storing it in the refrigerator before serving. Make sure Mung Bean Porridge has been left at room temperature before storing in the refrigerator.
The Ingredients
- 1 cup of mung beans
- 1 segment or more fresh ginger
- 1 cup of palm sugar
- 1/4 cup of white sugar
- 1 teaspoon of salt
- 200 ml of coconut milk
- 1 liter of water for boiling mung beans
- 250 ml of water for mixing palm sugar and white sugar
- Pandan leaves or you can replace them with vanilla.
Before Cooking Porridge
An important preparation that must be done before cooking the porridge at least 3 hours in advance is soaking the mung beans. Soak the mung beans for at least 3 hours. This method is to make the boiling process of the mung beans faster, the mung beans softer faster.
This step is a must and should not be missed, or you will fail.
Cooking Instructions
Step 1
Boil the sliced ginger along with pandan leaves and salt, with 1 liter of water. Bring them to a boil.
Step 2
After the water boils, add the previously washed mung beans, after soaking for at least 3 hours. Cook the mung beans until they are cooked, marked by the mung beans that look bigger than their original size. Or you can squeeze the mung beans to see if the mung beans are soft or not.
Step 3
After the mung beans are cooked and it looks like the water has run out, add the palm sugar powder and white sugar.
Step 4
Add 250 ml of water and mix well, then bring to a boil. Smells so good! Perfect!
Step 5
After the sugar water boils, it's time to add coconut milk. Keep stirring until simmer. Then, pick it up/remove it.
Step 6
Or you can skip adding coconut milk sauce if you don't like it.
