If we talk about traditional cakes in Indonesia, there are so many, and they will be different for each region. And some time ago I came to my cousin's house, and she served traditional cakes from Bangka Belitung and Sumatra.
This traditional cake has a unique taste, sweet taste and soft texture, maybe when I tasted it for the first time I thought it was sumsum porridge, but it turned out not to be.
The uniqueness of this traditional cake is in terms of appearance, the appearance of this cake has 3 colors and will be different for each layer. The top layer is white, for the middle part there is a green layer and there is also brown sugar sauce. Making this combination extraordinarily delicious.
Actually, in the green layer, there is an additional filling, namely young coconut meat. But because there is no stock at home, and I am too lazy to look for it outside. haha
Prepare the necessary ingredients:
Bottom Layer | Layer Green
- 200 ml pandan leaf water solution
- 350 ml coconut milk
- 4 tbsp sugar
- 1/2 tsp salt
- 125 grams rice flour
- 25 grams tapioca flour
- 3 drops pandan paste/green color
Top layer | layer White
- Coconut milk 500 ml
- Rice flour 55 grams
- Tapioca flour 25 grams
- Salt 1 tsp
- Sugar 1 tsp
Brown Sugar Ingredients | Chocolate layer
- 100 grams of brown sugar
- 150 ml of water
- 3 sdm sugar
2 tablespoons of cornstarch dissolved
a pinch of salt
3 pandan leaves
Cooking Instructions:
- Make the GREEN Layer.
First, let's make pandan paste first
Take 4 pandan leaves with 200 ml of water, then puree. Once smooth, strain to separate the pulp from the pandan water.
- Mix the flour with sugar, then stir until evenly mixed and add the pandan water solution and coconut milk. Stir again until evenly mixed.
Then add 2 drops of green coloring.
- Then cook over medium heat until thick and does not smell of flour.
Once cooked, pour into a container and smooth.
Now for this green layer, you can add young coconut meat, I skipped it because it's too hard to be lazy to find it hahah
Then we move on to the white layer,
- Mix all the ingredients. Flour, Salt, sugar and coconut milk. Then stir until it doesn't clump.
- Then cook over medium heat until it doesn't smell like flour anymore.
After cooking, put it in a container containing the green layer and smooth it out
Just wait for the dough we cooked earlier to cool, then we can move on to the brown sugar sauce.
Put the chopped brown sugar and water into a container.
Then add 1/2 tsp salt and pandan leaves again
Then mix 2 tablespoons of tapioca flour with 1:1 water until the flour becomes liquid.
Then cook over low heat, until the brown sugar dissolves and mixes with the other ingredients.
After the brown sugar has melted, add the flour solution and stir again.
The green and white layers are ready to be served.
Serve, cut the green and white layers, then pour the brown sugar sauce over the jongkong cake and it's ready to enjoy
Bangka's signature Jongkong cake is ready to be enjoyed, the sweet taste of the brown sugar sauce blends into the salty white layer.
