Greetings everyone! Today I want to share with you a delicious lunch with country flavors, I prepared it with fresh vegetables and the result was a delicious lunch to share with the family.
Menu of the day:
Rice with carrots
Beans with vegetables
Violet salad
Baked ripe plantain
I made the rice in a rice cooker. 2 cups of rice and for each cup of rice I added 2 of water.
I added half a tablespoon of salt and 1 tablespoon of soybean oil.
To prepare the beans:
I cooked 300 grams of white beans in the pressure cooker with 3 cups of water for 20 minutes.
I cut into small pieces 100 grams of carrot, 100 grams of zucchini and 100 grams of pumpkin.
They will be the companions of the beans.
In the blender, I added 1 cup of water, 1/2 head onion, 1/4 of paprika, 1 branch of cilantro, 1 piece of ajoporro, 3 cloves of garlic.
I added 1 tablespoon of salt and returned to the pressure cooker for 15 minutes more.
For the violet salad:
I cut into very thin strips 100 grams of white cabbage, 100 grams of violet cabbage, 1/2 red bell pepper, 1/2 head onion, 10 spinach leaves,1/2 tomato, 1 chard leaf, 1 sprig of chives and cilantro.
In a very hot frying pan, I added 1 tablespoon of olive oil and sautéed the salad for 3 minutes.
I cut half an avocado into medium-sized cubes. And I prepared a dressing with 1 tablespoon of mango vinegar that I brought from Cuba. A pinch of salt and a tablespoon of olive oil along with a charada of mineral water. I added it to the salad and reserved it in the fridge until serving time.
I put 1 ripe banana in the oven to accompany this delicious and nutritious lunch.
White beans are a great source of fiber that help improve intestinal transit. This lunch in general, contain vitamin B and C, iron, calcium and zinc. The combination of these ingredients makes it a lunch with a great contribution of nutrients to our organism, besides being really delicious.
