I recently made the decision to change my diet and go on a detox with my partner. After discovering some health issues I need to address, I wanted to see if I could fix them on my own with a diet and supplements. I'll be sharing my recipes along the way. After getting familiar with a few of the recipes, the change hasn't been that tough. There's lots of places to look online for inspiration.
For Day 1 I saw a Chipotle bowl recipe that looked tasty. 🌯 It was a veggie bowl, but it had black beans and rice. I substituted with chickpeas and quinoa for more nutrients. I also added sweet potatoes and a walnut meat substitute I whipped up. The ingredients are as follows:
- 4 cups of dry chickpeas (soak for 8 hours) 🥫
- 2 large sweet potatoes, peeled 🍠
- 2 cups of quinoa 🌿
- walnut meat (walnuts, seasoning, tomatoes, onion...throw it in a blender) 🌰
Almost forgot we made guacamole... 🥑
- 4 avocado, mashed with fork
- 2 diced tomatoes 🍅
- 1/4 diced onion
- cilantro 🌿
- tablespoon lime juice 🍋
- cumin
- salt & pepper
- After seasoning, bake the sweet potatoes and chickpeas for 30-40 min
- Before sweet potatoes get done, start your quinoa. If you don't use broth to cook your quinoa, make sure you season well.
- Make a bowl or throw it all on a plate 🍽️
