I love sweet, and I also love sour!
Whoever discovered what a brilliant marriage these two opposing flavours make, was a genius!
Opposites attract they say, and 'they' are so right, it happens in real life, time and time again!
It's been extremely hot here in Durban, with hot humid days - I think the humidity is what gets to me. I've been staying as far away from the kitchen as possible, but have been using my air fryer more often, way better than a big oven that warms up the whole kitchen!
Thankfully the last couple of days have been wonderful, we've had some nice rain, nice for the garden, but one can almost see the grass growing in front of your eyes! The lawnmower has been in constant use.
With the moderate days, I've been inspired to get cooking so am back in the kitchen again!
Pineapple in itself is both sweet and sour, right? Perfect in sweet dishes, on pizzas, in stir-fries, and also in sauces.
I also had a head of cauliflower, and decided to make crumbed cauliflower drums - yes they look just like miniature drumsticks.
The problem is I had no breadcrumbs in my pantry.
No problem.
There is always bread, and I now have an air fryer.
I cubed two slices of bread and placed them in the air fryer for approx 25 minutes till it was lightly toasted. When they were cool I tossed the cubed toasties into a plastic bag and crushed it with a rolling pin.
I broke the cauliflower into small florets, tossed them in the batter, and then rolled them in the bread crumbs.
Batter
- 200ml Flour - I used wholemeal flour
- 50ml Chia Seeds
- Approx 150ml Macadamia Milk
- Cayenne Pepper, Paprika, and Salt to taste
Beat together, leave to stand a short while
Dip cauliflower florets into the batter, then into breadcrumbs
Place in the air fryer and bake approx 30 min at 180°C or till golden brown
Sweet & Sour Pineapple Sauce
- 1 Onion, diced
- 4 small Bell Peppers, diced
- 1 clove Garlic, crushed
- Ginger root, grated
- 1 Pineapple, grated
- Juice of 1 Lemon
- Cayenne Pepper, Paprika, & Salt
- 5ml Soya Sauce
- Hot Green Pepper Sauce - a dash only
- 50ml Brown Sugar
- Approx 50ml White Vinegar
- 30ml Tomato Ketchup
Sautee onions & garlic, then add peppers, and cook for a few minutes
Add Pineapple & Ginger and the rest of the ingredients
Cook to reduce liquid, thicken with a little cornflour
Do the taste test - yep, sweet as well as sour, a deliciously piquant sauce, perfect for serving with the crumbed cauliflower drums!
