Hey everyone,
It's me again and I'm sharing with you today another plant-based recipe that I cooked after the typhoon. Because of the typhoon, I come up with the idea of cooking something that includes coconut since we have a lot of it now from the coconut trees that fell and also I want to make use of the veggies that was left in my garden.
Dinuldog na Kalabasa recipe
Kalabasa is our local term for squash. I don't know exactly how to explain if what type of squash I use because of the confusing variety but I can describe that has yellow-orange flesh and seeds at the centre and can be cooked as a dish or you can create them as a healthy snack.
Aside from cooking this dish simple, you can have various benefits that your body can obtain like vitamins, minerals and antioxidants which can enhance skin health, reduce the risk of depressions and improve eye health.
Here are the ingredients I made my dish
- 1/2 kilo squash (skin is removed)
- 3 cups freshly grated coconut milk.
- a few leaves of sangig (lemon basil) that was left from my garden.
- string onions that were left also from my garden.
- ginger and
- red onion that I bought from the market.
and for the seasoning, I used my favourite seasoning (magic sarap), salt and pepper.
How to cook
- I boiled the squash first until tender. Note that you can use the coconut milk second extraction for boiling.
- Meanwhile, if it's tender already adds ginger and onions.
- when the water reduces I add the pepper.
- and followed the coconut milk and put seasoning and salt.
- bring to a boil and lastly add lemon basil and spring onions.
This is my finished dish, very delicious and healthy.
