Many people are reporting a huge explosion in food prices and I wanted to show that this could be a good opportunity to try the vegan lifestyle. One of the huge benefits of eating vegan is generally much lower prices.
Many vegetables are not shooting up in price like many other products and you can make a cheap and tasty meal from them very easily. The main vegetables I like to eat at the moment are cabbage, broccoli, and cauliflower as they are quite wholesome and make some tasty recipes.
Depending on where you are on your health/vegan journey, having a meat-free meal with one of these vegetables would give your health a great boost AND save you money in these hard times. Not to mention how tasty it is and how great you will feel after!
Today I went shopping and was checking the price of the main vegetables, in particular, I was searching for cabbage because I asked my wife if she could make the vegan version of "Bigos", which is made mainly with cabbage.
Here you can see, that a cabbage costs just €1,49 and can provide 2 or 3 meals for a family!! We made lunch for a family of 4 and there was still half left for another meal. Plus the portion was big and we had enough left over to eat for supper or the next day if we wanted.
Of course, you need a few other ingredients like an onion and some carrots. But these are also inexpensive still.
The great thing about buying these vegetables and making some meals with them is that they are also not manufactured pushing the prices up and they are not made from grains, so are much healthier.
This is just one dish that you could make and it doesn't need to cost an arm and a leg. It is also quite quick to make. We ate it with mashed potato.
