That morning, when I woke up I thought about making this cake, well, the ingredients needed were complete at home. Especially, the coconut here is always available in abundance, I want to make it as a snack for pastries on the big day of Eid Al-Fitr celebration yesterday. Making it is also very easy, besides that the ingredients are also vegan so that's what makes me enthusiastic about preparing this cake.

Materials Used
250 grams of grated coconut
200 grams of powdered sugar
One teaspoon of salt
2 pandan leaves

The process of making these pastries does not take long, besides that the level of maturity when baked is very fast so it is perfect for those of you who are lazy to linger in the kitchen.
First, prepare tapioca flour by roasted it for a few minutes with pandan leaves. So, mark if the pandan leaves are crunchy, that means the flour is ready to use.
Prepare grated coconut then add powdered sugar, then stir everything.
Then add a spoonful of salt, and add flour little by little while he stirs by hand.
Stir the dough until it's loose and there are no lumps so it's easy to shape in the mold.
Then put it in the mold and press it a little and arrange it on the baking sheet.
Bake for 25 minutes at 180 degrees Celsius, don't forget to turn the baking sheet back and forth when it's baked so that the cake is cooked evenly.
The sagon cookies is ready to serve, store it in an airtight jar so that the cake doesn't get soggy and crunchy for quite a long time. Now, as I have debuted above, I usually serve this cake for snacks on holidays, this is a traditional cake which is still very popular in my area.
