Durian (Durio zibethinus) is a fruit that has sharp prickly skin, and has a soft flesh texture and strong aroma. Durian fruit is a plant that bears seasonal fruit, usually fruiting once a year. Well, now that the durian season has arrived, we can find this fruit a lot on the roadside, sold at a fairly cheap price compared to the price on weekdays if it is not in season. Well, this fruit during the durian season is usually sold for under IDR50,000 per fruit, but if it is not in season it will be sold at a price higher than that price.
Because I have a friend who has a durian garden, yesterday he gave me a ripe durian. He happened to come to my work location to take orders for fish seeds, so as a gift he brought us durians. Wow, how happy I was when I saw the cardboard durian fruit, when I got home I immediately thought of processing this fruit into food that can be eaten together, namely Durian Sticky Rice. Incidentally where I work we are very crowded there are about 10 people and all of them really like durian.
Durian Sticky Rice
Materials used
5 durians
1.5 liter thick coconut milk
100 grams of sugar
1 tablespoon salt
Now how to process durian sticky rice is actually very often done in our area, this food is one of the characteristics of the Aceh region. Because durian is classified as a fruit that has a high selling value, so it is processed by making it as sticky rice. enjoyed by the whole family or the closest people at home to the fullest.
Cooking Procedur
Step 1 First wash the glutinous rice thoroughly, and then soak the glutinous rice in clean water for about 5 hours.
Step 2Next, after soaking for 5 hours, steam the glutinous rice in a steamer for about 60 minutes, don't forget to add pandan leaves in the steamer.
Step 3 While preparing to cook the glutinous rice, I continue to cook the coconut milk on medium heat, add enough salt and then cook the coconut milk until it boils. After the coconut milk boils, let the coconut milk cool or until the coconut milk is warm.
Step 4 Next, after everything was ready to be served, I began to carefully cut the durian.
Step 5 Then take all parts of the fruit by collecting it in a container, after all of it is collected I add sugar.
Step 6 Then add salt then stir the durian or puree the durian flesh to separate it from the durian seeds.
Step 7 Now after everything is stirred and the sugar begins to dissolve, add it with warm coconut milk, stir slowly.
Serving Suggestions
Serve on a plate by adding a few tablespoons of sticky rice that is still hot or according to taste then flush with durian sauce, sprinkle with sesame according to taste. The taste of this dish is very delicious, sweet and has a distinctive durian aroma. You will feel a different sensation enjoying this durian, now this dish itself is very suitable to be enjoyed warm or with cold durian chili sauce, both will have different sensations in my opinion.
