Today I returned to my parents' house, after a few days I stayed at my sister's place. It's really quiet here, away from the noise of children like yesterday. I live three at home, mother, father and also me. Usually, when it comes to cooking, my mother leaves it to me. But in the morning it's usually my mother who usually prepares breakfast and I usually do it during the day. Today I cooked several menus at home, especially for my parents to cook non-vegan dishes. But for myself as a lunch dish I want to cook a different dish than usual. Usually I always prepare a quick and easy dish like a vegetable stir fry or a salad. This time I want to prepare stir-fried corn tofu with boiled pokcoy vegetables.
Pokcoy Stew With Stir Corn Tofu
This dish was the first time I made it, actually inspired by a non-vegan dish. They process it using chicken eggs, but who would have thought corn and corn could replace eggs in this composition. At first I was hesitant to combine pokcoy with mashed tofu. Inwardly will the taste and texture be perfect? who would have thought that the first impression, they were presented so perfectly, of course it really suits my tongue. And the best thing is even this dish is now my favourite.

Materials Used
100 grams of pakcoy
1 piece tofu
20 grams of shelled sweet corn
3 shallots
1 clove of garlic
1 sheet of green onion
3 bird's eye chilies
1 teaspoon salt
1 teaspoon sweet soy sauce (optional)
Cooking Procedure
Puree the tofu using a spoon or other tool until it crumbles.
Cut the onion, tomatoes and cayenne pepper into small pieces.
Sauté onions and also chilies and tomatoes with a little cooking oil
Add sweet corn then add a little water and cook until the corn is cooked.
Add crushed white tofu and cook until the water is reduced.
Add chopped chives then stir and cook again.
Then, add salt and sweet soy sauce, stir until evenly distributed, don't forget to correct the taste.
Soak the pokcoy leaves for 6 minutes in salt water, then boil them briefly in boiling water for about 5 minutes.
Serving Suggestions
Serve the pokcoy vegetables on a plate then flush with stir-fried corn tofu then add papaya flowers to make your dish interesting. Enjoying this delicious dish at lunch makes my tongue craving. This is a vegan dish which is very good for your health. Eating green vegetables along with tofu and also corn in one plate makes me feel better.
The savory, spicy and also soft taste of the tofu is very delicious. Moreover, the perfect blend of corn and also green vegetables. Usually I always sauté the pokcoy with the tofu as well but soaking the pakcoy and then combining it with the stir-fried tofu is absolutely perfect. For you tofu lovers or vegan lovers, try this dish they are perfect.
