Pineapple curry is a delicious Sri Lankan–style dish that beautifully balances sweet, sour, and mild spicy flavors. The natural sweetness of ripe pineapple blends perfectly with aromatic spices and creamy coconut milk, creating a rich and comforting curry.
This dish pairs wonderfully with rice, roti, or string hoppers and is perfect for adding a refreshing twist to your everyday meals. Let’s see how we can prepare it easily.
Materials Used.
A ripe pineapple.
1/2 onion, chopped.
Curry leaves
Some water.
A piece of Pandan.
A piece of cinnamon.
Salt to taste.
1 Tablespoon of coconut oil.
1 Teaspoon of crushed chili powder.
1 Teaspoon of chili powder.
1/2 Teaspoon of sugar.
The cooking process as follows.
First, peel the pineapple and cut it into small pieces as shown below.
Next, take a cooking pot and place it on the stove. Add about one tablespoon of coconut oil. Once the oil is heated, add the chili powder, sliced onions, cinnamon, pandan leaves, and curry leaves. Mix everything well and sauté for a short while.
Next, add the chopped pineapple, chili powder, salt, and sugar. Mix everything well again.
Now add a little water and cook for about 3 minutes. Then remove it from the heat.
