Today, I’m excited to share a delicious recipe made with leeks! Known for their mild flavor similar to onions, leeks are a wonderful green vegetable that can be transformed into a variety of flavorful Sri Lankan dishes. Among them, this simple yet comforting mallung (stir-fry) stands out as a special treat.
While many of us are familiar with traditional leafy mallung preparations, using leeks in a slightly different way brings a refreshing twist to this beloved dish. By finely slicing the leeks and combining them with a few classic spices and freshly grated coconut, we can create a warm, nutritious side dish that pairs perfectly with rice.
Quick and easy to prepare, this dish is a healthy and unique option you can enjoy on both regular mealtimes and special occasions.
Ingredients...
⭐️ Leeks 200g.
⭐️ 1/2 Cup of Grated Coconut.
⭐️ A finely chopped onion.
⭐️ 2 cloves garlic, finely chopped.
⭐️ About 3 dried chili peppers.
⭐️ Two green chilies or cochineal chilies.
⭐️ 1/2 Teaspoon of turmeric powder.
⭐️ Salt as needed.
⭐️ 1/2 Teaspoon of mustard seed.
⭐️ 2 Tablespoon of coconut oil.
The cooking process as follows.
First, wash the leeks thoroughly and slice them thinly.
Next, take a grinding stone (or mortar and pestle) and add green chilies, shallots, turmeric powder and salt as needed. Grind everything well into a paste.
Next, add the freshly scraped coconut to the mixture and grind it well together. Once mixed thoroughly, set it aside.
Next, place a pan on the stove and add about 2 tablespoons of coconut oil. Once the oil is heated over low flame, add a pinch of mustard seeds and let them splutter. Then, add finely chopped garlic and pieces of dried red chilies, broken into small segments, and sauté until they become slightly golden.
Next, add the chopped leeks and cook while mixing for about 2 minutes. Then remove from the heat.
This lightly spiced leek mallum not only brings variety to the table but also delivers plenty of nutrition and flavor in every bite. It’s a beautiful reminder of how even the simplest ingredients can shine when treated with care.
