Mango is a fruit loved for its sweetness and firm texture, but in Sri Lankan and South Asian kitchens, it goes far beyond being just a fruit. One of the most delightful ways to enjoy it is by turning it into a curry.
A mango curry brings together the perfect balance of sweet, tangy, and spicy flavors, creating a truly unique culinary experience. Whether made with raw mangoes for a sharp tang or ripe mangoes for a gentle sweetness, it pairs beautifully with simple rice or other side dishes, adding both variety and nutrition to a meal.
Ingredients...
π 2 medium sized raw mangoes.
π 1 medium sized onion.
π About 3 cloves of garlic.
π A piece of ginger.
π Curry leaves.
π 2 green chili pods.
π A cinnamon stick or two.
π 1/2 teaspoon of Fenugreek seed.
π 1/2 Teaspoon of turmeric powder.
π 1 Teaspoon of curry powder.
π 3 teaspoon of sugar.
π Salt as needed.
π 1 teaspoon of chili powder.
π 1/2 Teaspoon off Roasted curry powder.
π i tablespoon of coconut oil.
The order of preparation.
Step 1:-
First, cut the mangoes into small pieces and wash them thoroughly. At the same time, finely chop some onions, green chilies, curry leaves, and garlic.
Step 2:-
Next, place a pan on the stove and add about two tablespoons of coconut oil. Once the oil is heated, add fenugreek seeds, chopped onions, green chilies, and curry leaves. Then add turmeric powder, black pepper powder, curry powder, and roasted curry powder, mixing everything well.
Step 3:-
Next, add the chopped mango pieces to the pan. Mix well and cook for about 2 minutes.
Step 4:-
Next, add about 1 Β½ cups of water along with salt and about three teaspoons of sugar. Mix well and allow it to cook thoroughly.
Once the mango pieces are well cooked, remove the curry from the stove.
