It's a beautiful day today so I planned to pluck a young jackfruit for my meal without rice. You know guys, this kind of food preparation is commonly called Ensalada or salad and it's not sweetened but rather it is prepared like a vegetable side dish:)
Ensalada is made from raw young jackfruit. We need the following:
• Ginger
• Bell Peppers
• Tomatoes
• Bulb Onions
• Vinegar
• 2 cups pure coconut milk
• Jackfruit
- All ingredients are thinly sliced then set aside.
First remove the thick covering of the young jackfruit and slice for about an inch then prepare to boil water.
Let the water boil and add the sliced jackfruit. Let it boil until tender and throw away the boiling water then drain.
Prepare spices, add salt then slowly mix the young jackfruit (drained )using a pair of salad laddle while gradually pouring down the coconut milk. Refrigerate.
This is one of my favorites that I don't need another dish to blend with it.
I so love eating this stuff! The preparation is so simple yet it's nutritious and I only need to buy the spices since we already have the main ingredient in our backyard. Anyways, about a kilo of sliced young raw jackfruit would only cost you say, half a dollar and another half for the spices and the coconut milk for $1. All in all, you only need about $2 to prepare this delicious Ensalada!
