Today the weather is looking so bright in my area but it did rain ⛱ so much last night. I think the month of June is always with rain but we hope it will bring sunshine ☀too. I love bright weather a lot guys haha 😃.
So guys am here to share this simple dish of Curry Spicy Sweet Potato with Pumpkin leaves, ganished in Onion Recipe. It's a simple way we can quickly make a delicious meal of sweet potatoes especially if we don't want to waste so much time in the kitchen but we want to eat something delicious and spicy healthy. This meal is plant based fully vegan recipe.
We can choose to make a larger quantity of this delicious meal for a family by increasing the ingredients but am sharing with you only for just one serving.
Let's see how we can make this meal without over cooking the potatoes :
INGREDIENTS :
2 small sizes of sweet potatoes
1 onion (small ball)
1 reď hot pepper
3 - 5 pumpkin leaves from the bunch (fluted pumpkin leaves, known as Telfairia occidentalis)
1 teaspoon of curry powder
1/2 teaspoon of thyme
Salt to taste
Ginger for aroma.
Steps To Preparation :
- We start the preparation of this recipe by peeling the potatoes and cutting it into squars.
- I took just about 4 - 5 pumpkin leaves, washed and sliced it since I wanted little of it in the dish.
- Wash and slice the onion, the red pepper and dice the ginger
*Now the the ingredients are ready, so I move on to the next stage.
- Wash the potatoes and set it on the stove to start boiling.
- After a minute of boiling the potatoes, I added the salt.
- Added the thyme and the curry in another minute and stirred, Allow for another minute to integrate well
- The Red peppers and the soy cube was added another minute.
- Onion and ginger was added afterwards before finally the pumpkin leaf to cook for just a while since I do not want them over cooked
- And we serve and garnish if we like. I decided to ganishe with onions because that is the way I fell like presenting this dish recipe. The benefits and healthyliving of raw vegetables are not to be over looked especially as we grow older.
