My weekend here is usually tasty sweet snacks but the week was hectic so I needed to rest awhile into the evening, but instead prepared a delicious soft mashed potatoes 🥔 and plantains for dinner 🥘.
Have you ever tried making this combination of potatoes and plantains delicious mashed pottage? Its a simple meal with just few ingredients, but one you will love especially if you have little kids because the plantains made it so sweet.
Here I show you the step by step to prepare and enjoy this dinner 🥘.
INGREDIENTS:
1 large sweet potatoes
1 medium plantains
2 tablespoons of red palm oil
1/2 teaspoon of thyme herbs 🌿
1/2 teaspoon of black pepper
1/2 teaspoon of salt to taste
1 large hot chili 🌶
1 tablespoon of margarine 🧈
Few dried cent leaves 🍃
STEPS FOR PREPARATION:
Step 1.
Preparing this dinner 🥘 I will start by cutting the potatoes first in sizes to enable an easy peeling.
Step 2.
After peeling the potatoes, I will slash cut each part into straight cuts and dice cut them into tiny squares.
As above.
Step 3.
Next is to wash and soak the potatoes for little starch removal . (Optional)
step 4.
Will peel and chop the plantains to keep readily.
Step 5.
And here the hot chili 🌶 and dried cent leaves 🍃 I chopped too.
Step 6.
The potatoes I will transfer into a pot add fresh water, salt, and set it on the cooker covering it to start cooking 🥘.
Step 7.
Once it starts boiling, I will add the cent leaves 🍃, chili 🌶 and stir them in. As above.
Then will add the black pepper , thyme and margarine. Allow to cook while incorporating.
Step 8.
Here will add the chopped plantains, stir it inn and cook it on .
Step 9.
Finally will add the red palm oil into this recipe, stir all the combination thoroughly and cover it to cook more tenderly and soften for that mashed pottage finishing.
As here above.
And its all ready for serving. Finger licking pottage from this two base ingredients is so delicious as the plantains gave this dinner a perfect finishing. Its so soft and looks puree with some warm spice. I recommend this meal 🥘 to you all especially when you have potatoes and plantains leftovers in the pantry.
