Greetings hivers and vegan lovers β€οΈ. Hope we are good putting smiles on our faces as we watch 2023 drifting slowly. We need to be happy, eating healthy and delicious meals this season . We worked so hard through the year and this season should be for taking care of ourselves.
And today being in the spirit of celebration π I prepared a whole vegetable soup that is purely vegan delight. This soup is made up of lots of vegetables π₯, a soup for vegan lovers and one more than healthy because what can be better than a vegetable stuffed soup with plant spices.
Although many of us do not like lots of vegetable π₯ meals but to those who know the importance and value of vegetable meals, this very recipe is a delight.

INGREDIENTS:
1/2 of a medium size cabbage
6 leaves π of lettuce
1 medium size of cucumber
1/2 of a large bell pepper
1 medium size onions
6 medium size of carrots
1 tablespoon of green peas
4 cloves of garlic π§
2 red hot chili
1/4 teaspoon of turmeric
1/2 teaspoon of black pepper
1/2 teaspoon of sea salt
1/2 teaspoon of curry powder
1 soy cube
1 medium size ripe plantain
STEPS FOR PREPARATION:
Step 1.
To prepare this healthy recipe I will first clean, thoroughly wash and cut slice the cabbage and the lettuce π₯¬.
Step 2.
Next I will clean, wash and cut the cucumber, bell pepper and carrots.
Step 3.
Then clean, wash and slice the onions, bell peppers and garlic..
Step 4.
The plantain I will wash, peel and slice.
Step 5.
All vegetables are ready here, waiting to be cooked.
Step 6.
To starting cooking the vegetables π₯, I will add 2 tablespoons of vegetable oil in a pot, heat it up, add the onions, garlic and fry them to soften
Step 7.
As it fries on , I will add the red hot chili and the green peas to fry along, then add the salt and the cabbage. Stir all thoroughly together .
Step 8.
As the cabbage softens, I will add the carrot, green pepper, cucumber and lettuce. Stir and leave to cook for about 3 minutes.
Step 9.
Finally I will add the black pepper, turmeric, curry powder, a little water that will bring out all the juice of this soup out as it boils.
Step 10.
Once the soup boils and juice, I added the soy cube and the plantains. Stir and just allow for 2 minutes and set it down.
And what a delicious delightful vegan meal. Its full of aroma of a good rich soup but just simply prepared. This is all we need this season, replenishing and boosting our immune.
