Hope everyone is well. Today I was cooking a nutritious mixed vegetables curry so thought to share with you. I am trying to present each step simply.It is also delicious to eat.
Ingredients :
Stem amaranth - 3-4 pcs
Gourd - 100 grams
Potatoes - 1 pcs
Green chillies - 5 pcs
Sugar - 1 teaspoon
Salt - 1 teaspoon
Turmeric - 1 teaspoon
Oil - As needed
bay leaf - 1 pcs
The methods of making :
First, cut the vegetables. I cut each stem amaranth into 4-5 pieces. Cut the gourd into 4-5 pieces and cut the potatoes into small pieces.
Add oil to the pan. Heat oil on medium heat.After the oil is hot, add cumin & bay leaves as per instructions. Fry cumin for 30 seconds.After frying cumin keep it aside in another bowl.
Now add the vegetables to the hot oil. Then fry them. Keep the pan on medium heat while frying. Then I used 1 teaspoon tumeric. Tumeric will make the color of the curry attractive.
Now mix them together well and fry. It will take 5 minutes to fry. Cover the pan for 2-3 minutes. By this time the potatoes will be boiled. Then open the lid and add green chillies.
I have added 5 pcs green chillies. Not everyone likes chili so add chili according to your preference. Then mix with chilli curry.
Add water as needed. No need to add extra water.Add salt as needed. I used 1 teaspoon salt.
Mash some stem amaranth and potato in a bowl then add it to the pan.
Cover the pan for another 2-3 minutes. Now everything will boil better. After 3 minutes remove the lid and add 1 teaspoon sugar. Then
keep the curry in the pan for another 2 minutes on medium heat.Then take it down.
