“village food”, that's what some Indonesian people call it, this food depicts traditional rural communities, unlike hamburgers and pizzas which depict modern people's lives. Fried cassava is indeed synonymous with the village Cassava is a typical village food, because cassava is widely grown in rural areas.
Simple, that's the right word to describe my cooking today. The ingredients are simple (only cassava) with easily available spices and a simple cooking process too (boiled and fried), so as to produce delicious fried cassava.
I remember when I was in elementary school and living with my grandmother in the village, my grandmother often served fried boiled cassava. although this dish is simple, but we eat it happily because we always enjoy it together as a family. me, 6 uncles and grandparents.
Grandma usually cooks it for breakfast and also drinks tea in the afternoon. It's not about what we eat, but the meaning of family and togetherness (I miss moments like that).
We talked about anything, ranging from rice plants, goats, school and my uncle's lectures, even though we came from the village but when it came to education, our family prioritized it. I'm sorry I got carried away, I miss the moments when I was little 😭😭😭
This morning my husband and I bought some household needs at the traditional market, this market is the main market in our city, we can get all our daily needs in this wholesale market, one of the foodstuffs that I bought was cassava, I bought it 2 kilograms at a price of 7000 rupiah (1/2 USD).
Before preparing the other ingredients, I peeled the cassava skin and washed it clean.
let's prepare the ingredients to make the fried boiled cassava, the ingredients are:
2 kilograms of cassava
2 tablespoons coriander
2 tablespoons salt
3 cloves garlic
1 onion (about 50 grams, you can use other types of onions)
water 2 L
cooking oil 1/2 L
whether this food tastes good or not depends on the cassava, choose soft cassava, in my area it is called cassava bread, although the texture is hard on the outside like other cassava but after being processed into food, the taste of cassava bread is soft and soft like bread, that's why it's called cassava bread.
How to make fried cassava:
the first step: cut the cassava into two parts, not too small so as not to crumble when boiled.
the second step: puree the garlic, coriander and salt.
the step three: put water into the pot.
the fourth step: also put the cassava into the pot.
the fifth step: add the spices that have been mashed into a pot of cassava.
the sixth step: boil the cassava with ground spices until it boils and the cassava becomes soft.
The coriander sticks to the wall of the pot, so we mix it again into the cassava cooking water using a spoon.
the seventh step: check the boiled water, when the water has shrunk and the cassava is soft, turn off the stove.
This is the result of boiled cassava with ground spices (coriander, salt and garlic)
the step eight: thinly slice the onion.
the step nine: time to fry, provide boiled cassava and sliced onions, then let's heat the cooking oil and put the cassava in hot oil.
the tenth step: add sliced onions into the cassava that is being fried.
the eleventh step: don't forget to flip the fried cassava (the smell of fried onions makes me impatient to eat it). after the cassava is browned, let's lift it so it doesn't burn. fry until all the cassava is used up.
Typical rural fried cassava is ready to be eaten, served with a cup of coffee or tea.
Enjoy the typical rural fried cassava, a village food that is often underestimated for fear of being called "village" for those who eat it. For me fried cassava is a typical rural food, a symbol of family warmth.
I really miss my grandparents who died when I ate this fried cassava, in the end it is the good memories that we will remember to accompany our lives in the future, so keep doing good as much as we can.
Good luck making boiled cassava fried and don't forget to choose soft cassava.
