When reading this theme, it comes directly to my mind a sweet dish because the food with powdered sugar is usually sweet. Today I will make ginger candy with powdered sugar. I want to reminisce about my childhood which was very beautiful, when Eid comes, my grandma used to make ginger candy, so I want to make ginger candy now. I want to make it traditionally, just like when I was in elementary school. For several days with a happy heart, I will wait and ask grandma, is the ginger candy dry in the sun? The process of making ginger candy in a traditional way is what made my childhood fun and now when I make ginger candy in a traditional way, my children also ask the same thing "mom, is the ginger candy dry?"
The main ingredients for today's food are ginger and powdered sugar. Ginger is usually added to the dish as a seasoning, but today I will use ginger as the main ingredient to make sweets. Ginger candy has a sweet taste because I use powdered sugar and palm sugar. Ginger candy has a chewy texture because I use powder so that it can. The combination of spicy and fresh ginger will warm the throat. This candy is favored by all circles, children will swore ginger candy with sweet flavors, while parents will love the sense of spicy and fresh ginger candy.
Come on, let's go to the garden to get some ginger, because I plant the ginger in polybags, it's easier for me to find the ginger I want. I will harvest ginger that is between 4-5 months old, at this age the ginger is not too young and not too old. If the ginger is too young it will have less spiciness and if it is too old it will have a lot of fiber, so I choose ginger of the right age to make ginger candy.
Ingredients for making ginger candy
The ingredients that I use to make ginger are :
200 grams of ginger
2 packets of agar agar flour (choose the white one)
50 grams of cornstarch
50 grams of palm sugar
100 grams of sugar
1 L of water
Preparation
First, grind the sugar to a powder state, this powdered sugar is what we will use to coat the ginger candy, without the powdered sugar the ginger candy won't taste good. Store powdered sugar in a closed place so that the powdered sugar does not melt easily.
Second, peel the ginger skin, then wash it clean so that no soil is left behind.
Third, cut the ginger to make it easier to smooth the ginger in a blender, then put the ginger pieces into the blender.
Fourth, add water, then blend until the ginger becomes smooth.
Five, strain the ginger solution and collect the ginger water. I will use the ginger water to make ginger candy.
How to make ginger candy
First, put the agar agar into the ginger water, stir until there are no lumps of agar agar.
Second, add cornstarch to the ginger mixture, stir until well blended.
Third, add palm sugar / brown sugar, this will make the ginger candy colorless and not pale. Palm sugar will also reduce the spicy taste on the tongue when we chew ginger candy. I don't use artificial coloring, so I use palm sugar to give it a natural brown color.
Fourth, boil the ginger solution until it boils, when boiling don't forget to keep stirring the mixture so that the mixture will cook perfectly.
Fifth, after the ginger solution boils, turn off the stove, then put it in the mould, leave it until the ginger solution cools down.
Six, when the ginger solution is really cold, then put it in the freezer until it hardens, this is to make it easier for us to cut the ginger candy.
Seven, after the ginger candy hardens, remove the ginger candy from the freezer, then cut the candy according to taste. I put the grated ginger into the candy mixture, my husband likes it because it can help him suppress sleepiness when driving, because he doesn't smoke.
Eight, Dry the ginger candy pieces in the sun, when the sun is shining, it takes me 4 days to dry the ginger candy. every evening I turn the ginger candy over and over so that it dries evenly.
After 4 days, the ginger candy has started to dry up. I won't sun it anymore, I don't like it when the candy is too dry.
Nine, if the ginger candy is dry, sprinkle it with powdered sugar, store it in a dry and covered place, the ginger candy will last a few weeks, although children usually eat it in a matter of one week😅😅😅
The result
Ginger candy with powdered sugar is ready to serve.
When bitten, the ginger taste is immediately felt, spicy, that's why I sprinkled powdered sugar to make it taste more delicious.
