What a gwan friends it's been ages since I posted. Just been busy with everyday life. Working 2 jobs will do it to you. The typical West Indian stereotype smh. Anyhow I was off from my evening job so I woke up nice and early and cook a meal.
I had the roast beef well season up from the night before. So everything was ready to go meat wise. I also had the ingredients for the rice. Thyme,scallions, scotch bonnet pepper, pimento seeds, coconut milk, and gungo peas.
First I put some water to boil, then added the canned gungo peas, scallions etc etc. I let that boilfor 30 minutes so all the flavors can come together.
I didn't get a chance to take a pic of that stage, so I screenshot my Instagram video. Wish we had the options to post videos. Anyhow here's the finished product.
This was my first time making any form of jamaican rice and peas and it came out great. Very flavorful as well.
For the beef round roast, I braised both side for about 5 minutes each. I then placed it on a bed of scallions, thyme, rosemary, parsley, and red potatoes. I added the juices from the braise, along with some red wine vinegar and coconut oil.
In the oven it goes for about 1 hour 25 minutes. More or less depending on how you like your meat.
