Tomato Soup Instant Noodles with rice and Guyabano Juice.
Filipinos love rice. In fact, we eat rice three (or more) times in a day and I'm no exception. Especially at night when it's cold and sipping something hot and spicy might help make the tummy happy.
So, I was browsing through photos on my phone and saw this one that I wanted to share a couple of weeks ago. It had been sitting in my gallery and I have not been able to get around to uploading a story about it in my blog.
Anyway, it's almost midnight so I have to take inspiration from this to relieve the hunger that I'm feeling. I'm not in the mood of actually cooking something up, but I might just eat bread and drink some of that magic beverage called coffee, which seems to always help lighten the mood and perk up the senses.
For this version of my midnight noodle soup, I used Lucky Me Pancit Canton Extra Hot Chili and was planning to just follow instructions. I looked at the refrigerator and decided to veer away from the usual 3 minute noodles and just create my own soup base and additional ingredients to make it heavier.
I used Pechay, mung beans, and tofu for a fuller tummy and added tomato paste, chili powder, olive oil, salt and pepper, mushroom powder, and some Spanish paprika to liven up the midnight snack.
Going back to the photo, I love eating noodles, and all we had were instant noodles at that time. But we had tofu and a few vegetables. So I decided to cook up something with the leftover ingredients. This became a go-to midnight snack for me since I usually stay up late at night to write since it is the only time I can focus on writing, and whatever I'm doing, as I am the only one left awake.
There is actually no Spicy Tomato Soup Flavor from Lucky Me; this is just the result of my hunger, imagination, and leftover ingredients combined, which I thoroughly enjoyed and crave for every night.
It's always fun for me to be in the kitchen cooking up things and making a mess of the place, but once in a while I get to cook up something that I really enjoy eating. This is one of those times that make it worthwhile for me to experiment on things.
