A grey day. Perfect weather to take my wife shopping. She is still not allowed to drive - moonboot rules. Got the shopping done - lining up seafood for the day. A nice snapper and sashimi salmon
Have had a sushi kit in the cupboard for a few years now. Dug it out and set about preparing the rice. Simple enough - cook the sushi rice. Let it stand 10 minutes. Mix in the rice vinegar while still hot. Separate out seaweed shet and lay on the mat. Layer in the rice and your preferred ingredients
Also did salmon nigiri. The salmon had been cut into small pieces. Next time check the packs and get one with longer pieces. The age of the kit is evident from the roll - dark brown - not green and hard to separate the layers- hence the holes

Try again - salmon, cucumber and avocado for the centre. Photo shows did not quite get it right. Need to leave about one inch of sheet at thr top end. That way the rice stays inside the roll when rolling is done
Cut across ready to serve. Keeps well in the fridge one day.
Did cook the whole snapper for dinner. No photos. Simple tomato and basil dish. Chop onions and celery and garlic. Saute that until onion softens. Add in a little white wine to deglaze the pan. Then some chicken or vegetable stock. Get that hot - then a generous handful of cherry tomatoes halved. When that is a good tomato sauce lay in the fish and cook each side 5 to 7 minutes. Well - keep going until you can see the flesh flaking. Turn over and do same again. Just before serving lay on some shredded basil leaves - be generous. With them. Serve with potato mash.
