In the lowlands, elderflower blossoms are already past their prime. They are too burnt out by the sun to be suitable.
In the mountains, where everything is late for several weeks, elderflower bushes are at their peak.
Today we were picking blossoms that will be dried and stored and prepared as tea on cold winter days. Excellent!
After we picked the blossoms we trimmed them and let them dry.
In a week or so the blossoms will be ready to be stored. We'll put them in paper sacks and store those in tin or glass jars.
