When there are some rotting vegetables that we didn't have enough time to cook it..
There are some good ways to preserve them longer...
Of course, the rotten parts are discarded 😅
And one of them is making Hummus!
Actually, I have been craving for it for a while, and finding rotting vegetables suddenly became an opportunity 😅... hence, the hunt for ingredients begins!
While heading towards the ingredients section, I came across the festive feeling of Chinese New Year, with all the family themed t-shirt for the year of the Golden Dragon, people slowly feels a sense of festive joy looming.
So after draining the aquafaba and cooking through the chickpeas one more time, then roasted the chopped pepper and carrot that were slightly rotten, I started preparing the ingredients together.
- a cup of chickpeas
- 1/2 cup of roasted sesame seed dressing
- 1/2 teaspoon of mixed Italian herbs
- chopped roasted carrots and Bell Pepper
- 1/8 of cold pressed extra virgin olive oil
(Eyeball the consistency if it is too dry, add a little more) - salt to taste
- pepper to taste
- 1 tablespoon of lemon juice
Please take note that this isn't 100% traditional hummus recipe as I have replaced some ingredients from its original, like Japanese roasted sesame seed dressing for tahini_
I actually bought myself a birthday present last year, a portable blender, but never got to use it for months, and finally, after charging it , I gave it a try.
The 6 blades are a little small, but the motor is actually quite powerful looking despite being a portable rechargeable blender
After splitting to 3 parts to blend and giving it a proper shake to make sure it is well incorporated, the hummus is ready for consumption!
I added additional olive oil to make sure it doesn't dry up in the fridge
a little on the sweet side due to the roasted sesame dressing, but overall, it was still very good.
The blender did quite a good job not leaving too coarse of a texture.
I even introduced it to my parents. My mom enjoyed it dipping with sourdough.
I think dad was a bit sensitive to the pepper... he had a bit of stomach upset after that. But being constantly troubled with constipation, this became kind of a "detox trigger" for his body to flush whatever stuck in the intestine out 😅
The whole thing was about almost 400g size tub of hummus. With the same price, I could only get around 200g ready-made chilled hummus.
I have so far already made 2 burritos, 3 times dips with crackers, and I still have some left.
Probably next time, I will soak the dried chickpeas and cook them from scratch because it is hard to find canned chickpeas, and the one I got has doubled its price since lockdown

Chickpeas do have a pretty good base of nutrients, and its ingredients are vegan / vegetarian.
I still have quite a few pieces of wraps I can add-ons, maybe with long strip marinated carrot sticks and some lettuce next round.
