It's one of my favourite dishes now, and I like how healthy and tasty it is.
When I studied vegan and raw dishes, I was surprised how Borsch could be cooked without traditional meat, bouillon and cooking of all ingredients.
But when I tried it, I was surprised even more that it's really tasty and easy-to-do.💚
Now I cook it rather often, especially now when it's almost summer, and we have many new fresh veggies of this season.
My son likes this recipe too, and though we have no problems with eating a lot of veggies (like many other kids have), this recipe consists only veggies, and it's super cool!💚
Borsch is a traditional first dish (soup) in Russia and many other neighbour countries.
For this raw vegan variant we need:
- beet
- carrot
- greenery
- cabbage
- garlic, salt, spices
- avocado
- water
If you need not a raw recipe, but just a vegan one we can add boiled potato.
I add it this time because my son likes it, but often I cook a raw variant too.
My son doesn't like avocado:( but when I mix it with greenery and make green smoothies as a boullion for my vegan borsch, he can eat it well:)
A Beet, a carrot and cabbage are rubbed.
Avocado and greenery with garlic are shaken up in the blender.
Now we have a pergect red colour with juicy greenery and a cool taste of veggies with an avocado💚
We don't cook it, don't boil it. We just mix all parts and wait for 15 min to let all tastes mix better.
