Filipinos call this fish "Espada" which means sword because it literally looks like a double edged sword. This is a favorite local fish that can be found in the different wet market of the country.
Its length is usually 12 inch long and most of the time even longer. It doesnt have scales like a bangus or tilapia. Its skin is very smooth & slimy
You will know if it is still fresh if the eyes of the fish is not red and it still smells like the sea water. Our town , Las Piñas is so lucky to be a coastal town that is why we get them very fresh. Sonetimes they are delivered in your house by local street vendors.
Espada fiish costs about 140 pesos per kilo. It is prepared by just rubbing salt all over it and is best cooked by simply frying them and making sure that they are very crispy.
Perfect with hot rice for either breakfast, lunch or dinner. Espadahan na tayo. Lets eat! !
