Hummus is delicious and nutritious. Made mostly with Chick Pea - lots of complex carbohydrates and protein. An excellent spread for a sandwich, wrap or pita, and it's great for dipping tortilla chips too.
Very basic ingredients including Cooked Chick Peas, Hot Pepper Rings, Olive Oil, Basil, Garlic, Lemon Juice, and a Pinch of Salt. Canned Chick Peas work well if you have them, be sure to rinse them.
If you cook the Chick Peas from dry bean, be sure to chill them in your fridge, or in the last remaining snow bank before mixing the ingredients.
Lemon Pepper Hummus Ingredient List:
- 1 Can or 1 Cup of Cooked Chick Peas
- 2 Tablespoons of Hot Pepper Rings, more if you like it Spicy
- 1 Tablespoon of Olive Oil
- 1/2 Tablespoon of Lemon Juice
- 1 Teaspoon of Dry Basil
- 1 Teaspoon of Diced Garlic
- Pinch of Salt
Mix the ingredients in a food processor, with a mortar and pestle, with a tough bowl a strong arm and a spoon, or a hand crank mixer.

Any left over Hummus can be stored in the fridge for a few days or in the freezer for many months. Be sure to properly and fully thaw before you open the container if you freeze it.
So Delicious, I'm enjoying some now. Just the right amount of hot pepper rings and garlic.
