This was sooo beautiful, it’s mango season here in Trinidad! Shout out living in a tropical island, the fruits we have here is sooo delicious and exotic! And well coconut is always here... so I love to include seasonal items in the menu.
I just battered the tofu and fry it, then made a Savory Mango Sauce that I drizzled on top of it. Then I made a mango salsa - which is basically regular with cubed pieces of mango in it.
Served this meal with brown rice and a side salad 🥗
Plus we’re entering a second festival.

This festival isn’t a vegan festival, it’s just a much larger food festival, so this should be a much different crowd.
