As I mentioned before, I'm a girl, as a girl I need to eat or I will die. For this reason I learned to cook. Now I am a chef extraordinare! Okay, so maybe I'm not a 5 star chef... YET! But a girl has to start somewhere.
I didn't know what I wanted to eat, worse, I had to run to the market because I didn't have some of the essentials. I ended up not making anything until I got home. I wanted food, good food, but easy yet filling. So I made potatoes and egg with turkey and topped with cheddar cheese. I'm new at this... I forgot to take step by step pictures, mea culpa. But the first few steps are really easy!
Firstly, I LOVE cast iron pans, my recommended brand would be Lodge. The pans are relatively inexpensive, less than some higher end non stick pans! They are SUPER easy to use! Hardly and soap is used, and you CAN use water! Best way to clean the pans, is get them really hot then turn the faucet to the hottest water possible. Then put the pan underneath. It will start steaming like crazy with a sponge with a handle just give a quick few swipes, then dry off well. Now the seasoning.... Get a lint free cloth, add a small amount of oil to the pan, spread it all over, re heat slightly or wait until the next time you cook. Done! Just as easy as non stick pans! For the record, you will only be seeing me use cast iron pans by Lodge.
Ingredients are few and simple. You can go as crazy as you want with this!
1st ingredient: A potato. Rule of thumb is one potato per person, unless the person is a light eater, than 2 person. If potato is large, one suffices for two people.
2nd Ingredients: Spices of choice! Necessary are salt and pepper. I like to use garlic salt, with a bit of Basil, a hint of Italian Seasoning, some Chili Powder and Crushes Red Pepper. I usually do not measure my spices but about a ½ teaspoons of all and a ¼ of Italian Seasoning. The spicy spices to taste. And finally some fresh cilantro, also to taste.
3rd Ingredient: Egg. Usually 1 per 2 people. Unless small eggs than 2 per person.
4th ingredient: Turkey/Chicken/Beef/tofu
1st step: Heat the pan.
2nd Step: Chop the potatoes into small pieces. How? However you choose! Slices! French fries! Cubes! Stars! Hearts! Okay... The last two might be too hard... But you get the point!
3rd Step: Add the spices! As much as you want and whatever you choose! The fun part!
4th step: Add the oil/butter/lard of choice! Then add potatoes! Cook until just becoming tender, then add the cilantro. If not skip this step.
5th step, when the potatoes are tender but not yet done add the egg and cook slightly then add the turkey or other meat(less) option. This is EXCELLENT for leftovers! Cook until potatoes are just about done, then add the cheddar. Let it melt and get all gooey. Serve hot!
So filling, so delicious!
